Most food recipes are handed down orally from generation to generation, have become the pillar of a rich heritage humbly built by women whose social role has been culturally framed by the domestic sphere. With few ingredients and scarce technical means, women have shown great creative skills and progressive strength in writing the history of what we today call gastronomy.
Although the geopolitical history of the United Arab Emirates can be considered relatively short, that of the population and territory is not. The UAE’s gastronomic heritage is the result of a rich cultural crossroads. We have found through this research that there are numerous ingredients and cooking techniques in Emirati cuisine, common to those Italian Mediterranean areas where the Ottoman Empire has been most influential. This research then resulted in a collection of recipes and a selection of ingredients common to both the Emirati and Italian traditions within
this Volume.
